I was at the lake with some friends when one of the Moms pulled out a container of these Protein Balls and started handing them out to all of us. HOLY YUMMMMMM! They were so good! She said she’d share the recipe and she did.
I made a couple changes but there’s not much to this simple recipe. I already had all the ingredients on hand. Don’t you love recipes like that? I added a few sprinkles but it’s not really an ingredient unless you want it to be!
Can I just point out the fact that I only use Crazy Richard’s Peanut Butter (it has only one ingredient PEANUTS.)
- 1 cup oatmeal
- 1/2 cup peanut butter (Crazy Richard’s PB is the best)
- 1/3 cup honey
- 1 cup coconut flakes
- 1/2 cup flaxseed ( I left this out only because I didn’t have any on hand)
- 1/2 cup chocolate chips
- 1 tsp vanilla
Store in an airtight container in the fridge for up to a week.
